Here’s A forged Damascus steel kiritsuke. about 250 layers.
The kiritsuke definitely seems to be the preferred style of knife among the professional chefs.
I myself have always preferred the Japanese kiritsuke over other style blades, but I think it is the appearance more than the functionality of it.
This one has a handle made of cherry, with some jade as a bolster.
